Applesauce Muffins

 



Ingredients:
1 cup unsweetened applesauce
1/2 cup sugar or maple syrup or honey
1/4 cup oil (olive oil, avocado oil, or melted coconut oil)

1/4 cup milk
2 eggs
1 3/4 cup all-purpose flour (you can also use white wheat flour) 
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves

Topping: 
1 tablespoon melted butter
3 tablespoons sugar
1 teaspoon cinnamon

Directions:
- Preheat oven to 350 degrees
- Prepare a muffin pan with muffin liners or oil spray
- In a bowl, combine ingredients and stir until combined
- Spoon batter into prepared muffin pan
- Bake for 15-20 mins (if mini muffins 11 to 13 mins) 
- Allow to cool in muffin pan for a few minutes and then remove muffins to a cooling rack
- While muffins are cooling melt your butter and mix your sugar and cinnamon in a small bowl 
- Once cool to the touch brush the tops of the muffins with butter and dip them in the cinnamon sugar mixture

French Toast


French Toast Recipe

INGREDIENTS

2 large eggs
1 cup of milk
1 teaspoon vanilla
1 pinch of salt
12 slices of brioche 
Coconut Oil/Butter
Confectioners Sugar
Maple Syrup and strawberries

DIRECTIONS

1. Preheat the oven to 250 F

2. Beat the eggs, milk, vanilla, and salt together in a large bowl until cream-colored. Pour into shallow dish. Dip the bread into the mixture, one slice at a time, 4 to 5 seconds per side. 

3. Grease pan with coconut oil and then preheat it on medium heat. Once hot sweep a stick of butter around the inside of the pan. Fry the bread in batches over medium heat until golden brown, turning once, about 3 to 4 minutes on each side. 

4. Remove to a baking sheet in the oven to keep warm until all the slices are cooked. 

5. Service sprinkled with confections sugar and topped with maple syrup and strawberries

This has become our favorite french toast recipe. You'll often find us enjoying it brunch after church on Sundays! 

Chocolate Chip Cookies



Chocolate Chip Cookies

My go to cookie recipe when I just need a small amount of cookies to get us through the weekend. Super quick to mix together and you'll be eating delicious cookies in no time!  

INGREDIENTS

1 1⁄3 cups all-purpose flour
1⁄2 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 cup unsalted butter, at room temp
1⁄4 cup granulated sugar
1⁄2 cup firmly pcked light brown sugar
1 large egg, at room temp
1 teaspoon vanilla extract
1⁄2 cup mini (or regular sized) chocolate chips

DIRECTIONS

Pre-Heat oven to 350°F Have ready 2 ungreased baking sheets prepared with parchement paper. Sift the flour, baking powder, baking soda, and salt together in a bowl, set aside.

In a large bowl, using an electric mixer on high speed, cream the butter until fluffy and pale yellow. Add the granulated and brown sugars and continue beating until mixture is not too gritty when rubbed between your thumb and finger. Add the egg and vanilla and beat on low speed until blended, occasionally stopping the mixer and scraping the sides with a spatula as needed.

Add the flour mixture to the butter mixture and beat on low speed just until blended. Add the chocolate chip cookies and stir in with a spoon just until blended.

Using a medium cookie scoop, drop dough onto the baking sheets spacing the cookies about 2 inches apart.

Bake the cookies until golden brown around the edges, about 11 minutes. Let the cookies cool briefly on the pans before transferring them to a tea towel to cool completely.
